A lot of versions of Take It Easy exist, but SnapScore only supports two. It won't work if yours isn't one of them! The best-supported version looks like this:

If your version of Take It Easy is one of the two shown above, following these hints when taking a photo will minimize the probability of recognition errors.

Make sure your hexes/tiles are aligned with each other and the grid reasonably well.
Make sure the whole board is on your photo.
Avoid reflections at the corners of the board.

Game boards with designs other than the two shown above won't be detected by SnapScore's image recognition code.
